2 cans Garbanzo Beans (Chickpeas)
2 cans Kidney Beans
1 can Black Beans
2 cans Green Beans
1 cup apple cider vinegar
1/4 cup Olive Oil
1 tsp freshly minced garlic
1 small red onion, finely chopped
1 1/2 tsp dried basil
1 Tbsp honey
Salt and Pepper to taste (I used probably a tsp of salt and 1/4 tsp ground black pepper)
Drain the Garbanzo, Kidney and Black beans, then rinse thoroughly. Drain the green beans. Pour all the beans in a medium size mixing bowl. Add the remaining ingredients. Stir to mix (stir carefully so you don't break the beans up too much!), then let sit at room temperature to 'marinate' for a few hours. Eating at room temp is lovely, or refrigerate and serve later. Pretty tasty!!
*As a side note (mostly to myself) for future reference, this could also easily be made with dried beans and fresh green beans and fresh basil. Just cook the amount of beans you want and add as directed (including the rinsing--and make sure the beans are cooled before you add them). Also, if using fresh basil, chop it finely and add a Tbsp instead of just a tsp.
