Finding a marinade that doesn't include sugar or wheat is virtually impossible--even if you're making it yourself! Surprising? I thought so, too. Everything asks for soy sauce. I used to think soy sauce was harmless, and it probably is. However, regular commercial soy sauce has corn syrup in it...and if you get the 'fresh brewed' stuff, it has wheat. Both are no-no's for me and some of my family. While those miniscule amounts probably don't really matter, I'm trying to avoid it all completely. So, I made up a marinade for meat that has no soy sauce, no sugar, and no wheat.

When it's bedtime, we give our kids a quick bedtime snack. We do this for two reasons. First, it really seems to help them sleep better. Second, we like to read the scriptures together as a family, and this is the ONLY way we can get the kids to sit still and listen...and sometimes *gasp* even participate! This is just a sampling of our bedtime snacks which are always either just fruits or a combination of fruits and veggies. The kids love it and we don't mind joining in, either! We always have apples and oranges, but we've also had pears, grapefruit, kiwis, bananas, mangoes, pineapple, cucumbers, carrot sticks, grapes, etc. The best BLT I've ever had. Hands down. This was totally my husband's invention. Amazing. Try it, you'll love it!
This is one of my basic go-to recipes. If I don't have any new ideas, I just keep coming back to this one. It's just so yummy--a lovely chicken nestled in a roasting pan full of veggies...what could be better?
Ok, so pretty much everyone loves tacos. I love tacos. My kids love tacos. This is a little twist on tacos for those cool fall or cold winter days. We do love taco soup--maybe as much as regular tacos!
Quiche is something I totally loathed as a child and have learned to love as an adult. The best part about quiche is the fact that you can throw all kinds of things in it and it still somehow manages to taste good! This recipe is one even my kids eat--even the child who LOATHES eggs! So, in my book, that's a keeper!
The crockpot is marvelous!! Minestrone is a very versatile soup. It has humble beginnings in Italy and was a food primarily eaten by peasants (not unlike the French Ratatouille). But now, it's definitely not a peasant food! It always contains beans of some sort, but recipes vary. Some use red beans, some white, some mixed. There are always lots of veggies included. Sometimes there's meat (such as beef or chicken), sometimes it's vegetarian. For this recipe, I will use my white bean/chicken minestrone
Spiced sweet potatoes as a side to a salad topped by Alaskan Pollock This dish was inspired by Thanksgiving. I LOVE candied yams, but I can't eat all the sugar (and the marshmallows). So, after some thought, I tried this little recipe out as a side dish instead of french fries or the regular baked potato. It was divine. I will do it again! This could also make a lovely breakfast dish!
_I am a serious Salad Fan. I have to eat salad at LEAST once a day. It's so good and so filling and just gives you all kinds of energy! I can hear many people groaning when I say that, but I never eat the SAME salad every day!! When you eat the diabetic diet, you have to get very creative so you don't get bored and sabotage your health. Really, the sky's the limit when it comes to salad. If it's fresh, you can probably put it in your salad! Just remember to put some sort of protein in it to keep it satisfying and filling and you're good to go!
