Don't let the long list of ingredients scare you. It's too yummy to avoid! :)
1 kg (2lbs) ground beef
1/2 c brown lentils
1/2 c red lentils
1 large onion, finely chopped
handful fresh green beans, finely chopped
4 cloves garlic, minced
1-2 c water (depending on whether you want it stew-like or more soup-li
1 can coconut milk
1 Tbsp fresh parsley
1 tsp dried oregano
2-3 tsp cumin
seasoned salt to taste
5-6 small button mushrooms, finely chopped (optional)
Brown hamburger in a large skillet, add onions and lentils. Add remaining ingredients and simmer.
Cut pumpkin to fit inside of your crockpot. Gut it (take out the inside stringy stuff and seeds--cook the seeds! They're SO yummy!!) and make it sit in your crock pot like a giant bowl.
Pour skillet ingredients into pumpkin 'bowl'. Add a cup or two of water to the bottom of your crockpot. Cook on high for 3-4 hours.
Add a dollop of plain yogurt to your bowl before eating. Mmmm...
