1 can whole fat Coconut Milk
1 whole egg + 2 egg yolks
1 tsp vanilla
1 1/2 tsp almond extract
1/4 c pure maple syrup
1 c (+more for garnish) fresh chopped strawberries
slivered almonds (for garnish, if desired)
Pour the coconut milk, eggs, vanilla, almond extract, and maple syrup into a sauce pan. Slowly heat almost to the boiling point, while whisking almost constantly. When it thickens, take it off the heat. Transfer to a mixing bowl to cool. Once it reaches room temperature, cover with plastic wrap and refrigerate until chilled (1-2 hours). When chilled, pour the custard mix plus 1 c (or more if desired) chopped strawberries into ice cream machine and turn on. Mix according to directions. Once the ice cream is ready, serve into bowls and top with fresh strawberries and slivered almonds (if desired). Enjoy!!!!
